Banoffi Pie

Today we visited my parents place and my Mum had made Banoffi Pie for a treat!  Last time I mentioned her Banoffi Pie (here) everyone was wanting the recipe... so this time I took a few photos of her pie and got the recipe as well!

It is so delicious and definitely the best Banoffi Pie I have tasted yet.


Banoffi Pie (6-8 servings)

100g butter, melted
250g packet vanilla wine biscuits, crumbed
380g can Highlander Caramel (can used Dulce De Leche instead)
2 bananas
¾ cup cream, whipped
2-3 tbsp grated cooking chocolate

Combine the melted butter and biscuit crumbs.  Mix thoroughly.  Press over the base and side of a deep 20cm loose-based flan tin.  Chill for 30 minutes.

Spread the caramel over the crumb base, then chill for about 1 hour or until the caramel is firm.  To serve, slice the bananas and arrange all but a few slices over the caramel.  Top with the whipped cream, then decorate with the remaining banana slices and grated chocolate.

    If I had the Highlander Caramel and cream in the house I'd be off to the kitchen to make it now!

  12. I love banoffi pie. I don't make it as often as I would like though because it doesn't seem fair on my dairy free boys! Still, maybe my waistline is thankful for that!

    Yay, made this the other day! Beautiful. Just wondering though if it is meant to be 3/4 c cream? It's the same recipe as on the Highlander caramel tin (just realised this while following your recipe! lol) Love your site :)
