Gluten Free Chocolate Cake

I recently baked a cake for my brother-in-law's early 50th birthday.  I wasn't quite sure what type of cake to make as it needed to be gluten free, so I adjusted one of my favourite chocolate cake recipes and it turned out great!

I doubled the recipe below to make a 3 tiered cake filled with vanilla butter cream, iced with chocolate butter cream icing and decorated it with fresh berries and white chocolate shavings!

Here's my modified recipe, enjoy!

Gluten Free Chocolate Cake
Preheat oven to 180 degC

 cups gluten free baking mix or gluten free flour
1 cup sugar
½ cup cocoa powder
1½ tsp baking soda
1 tsp salt
1½ cups milk
100g butter, melted
2 eggs
1 tsp vanilla

Mix all the ingredients together in a mixer and pour into a greased and lined 20cm cake tin and bake for approximately 50 minutes. 

Once cooked, ice with frosting and decorate!

This last month has been rather busy since we've moved into our new home!  We are loving our new place and can't wait to get cracking with the internal renovations (just waiting to re-pile the house first).

Including celebrating Mother's day!!  We had an awesome day, starting off with church (and me preaching - eeeeek), then spending time with family for the rest of the afternoon/evening. Strangely enough, I forgot to get photos with  my mum, mum-in-law or my kids!

Birthday Girl (aka "Where has my baby gone!?!?")

Today we celebrated my Mother's Day baby - and as I look at this tall young lady, I do have to wonder where my baby has suddenly gone!

This sweet girl has such a caring nature, quirky sense of humour and lovely heart - she's such blessing!

Today we gathered with her best friend and grandparents and great Nana to celebrate - I still am blown away at what a blessing it is for our children to have both sets of grandparents and a Great Nana in their lives!  I love family so much!

The birthday cake requested was a plain chocolate cake - a sign that she is growing up (especially after last years party!).

Happy birthday to our sweet girl!  Praying for an amazing year ahead, filled with adventure and laughter and heaps of great memories made.
