Drowning in Yarn...

I feel like my blogging world has been a little neglected lately.  My creative world has been zilch, except for my Mum's grannysquare blanket I'm desperately trying to finish before her birthday in 2 weeks time!  Eeeeeeek!  I really hope I can finish it - if not, she may be given a half made one with a "how to finish your own granny blanket kit".  That would be a fabulous cover up idea, wouldn't it!?!

A week of birthdays are around the corner with our oldest turning 14, Symon enjoying the last year of his thirties and my Mum celebrating a big number that I won't share because I value my life.

In other news, Symon and I checked out "The Office" last week, a cute retro café out in Maungatapere.  The drive was lovely and the café great.  The company was the best.

I recently found a big hunk of concrete in my 6 year old daughter's school bag.  It has been in there for over a week (I know this because her big sister has been telling me that she had some concrete in her bag, but thinking it was a tiny chunk I didn't bother to check).  Things like this make me smile (and take a photo).  I asked her why she had it in her bag, and she said it was because she might make something with it.   Can't wait to see what.

When I went back into the world of working last year, it was to a 5 day a week job while at the same time we became senior pastors of our church (crazy huh?).  Slowly it moved to 3 days a week, and last week I dropped another day so am now down to 2 days, with the other two spent helping out Syms at church.  I love it - hanging with people like these crazy guys below is the highlight of my week!

Winter is slowly arriving, which means warm fires and roasting (or burning in the boys case) marshmallows.  I'm liking this time of year (if you take away the wet washing that never seems to dry).

So hopefully this blogging slump will be over soon, with a beautiful finished grannysquare blanket to show, birthday photos and a stunning creation from my daughters hunk of concrete.

Coconut Carrot Slice

You've got to try this slice - the carrot cake-like base topped with a crunchy coconut topping is sooooo good!  The husband and kids have been begging me for more, but I've been a good girl and put the rest away for lunch boxes this week.  

So yum, and the fact it has carrots in it makes it sort of healthy doesn't it?? *wink*

p.s. If you don't have muscovado sugar, brown sugar (or probably even white sugar) works just fine.

Coconut Carrot Slice

250g pack unsalted butter
300g light muscovado sugar
1 tsp vanilla extract
3 large eggs
200g self-raising flour
50g desiccated coconut
200g grated carrots
2 tsp mixed spice

- For the topping:
85g desiccated coconut
25g light muscovado sugar
25g butter , melted


1.  Butter and line a tray or small roasting tin, about 20 x 30cm. Heat oven to 180°C. Gently melt the butter in a large saucepan, cool for 5 mins, add the sugar, vanilla and eggs, then beat until smooth with a wooden spoon. Stir in the flour, coconut and ¼ tsp salt. Stir the carrot and mixed spice into the mix. Bake for 30 mins.

2.  Meanwhile, evenly mix 85g more coconut with 25g light muscovado sugar and 25g melted butter. Smooth this over the cake, then bake for 10 mins more until golden and a skewer inserted comes out clean. Cool, then cut into squares.

Because my brain is struggling to write proper sentences, here are a few short ones of what we've been up to lately...

I've been remembering the good times we had while we were visiting Australia - loved it!

Our boy started drum lessons this last week and loves it! p.s. I reckon he's super cute too.

In other news: Being avid Android supporters, we were rather suspicious when we found Apple stickers all over our car this week...

After a bit of a break from my #mileaday commitment, I've started to get back into the groove.  It feels so good to get fit again (although it doesn't feel great waking up at 6am to do it).  I've had quite a few questions about whether I run or walk? How far I go? Have I lost weight? etc.  

Just for those people - I run on a treadmill for 20 minutes most mornings (around 3.2km), I feel like I'm dying while doing it and yes I've lost weight (around 9-10kgs) but only after I started watching what I ate as well as exercising.  So there - hopefully that takes care of all of those curious questions.  The NOOM app has been one of the major helpers - and it's now even available for the iphone, so check it out!  I'd highly recommend it.

I still love cake and chocolate though.

Yummy stuff has been consumed this week...

Knitting lessons have begun (mainly because I, a lefty crocheter, can't be bothered teaching my right handed girl how to crochet).

We recently met our little great nephew Asher - we think he is adorable, but I'm not so sure what he thinks of us...

So there's a little snapshot into the crazy life of the Drakes - I'm off to rest my brain and crochet while I'm at it!

Rhett and Link

It's not very often that you can tell your kids that you discovered someone cool before they did - and tonight I got to rub it in.

My boys have been loving the new Rhett & Link phenomenon.  These guys are too funny!  They are super popular on youtube and even have their own tv show with their funny commercials.

The best thing of all is I blogged about these guys back in 2011 when they were making their funny Jelly TV clips as the Bently Brothers.  Cool huh?

My boys still don't think I'm cool... but I'm trying to drag it out and grasp at the "cool mum" straws.

Mother's Day and my Snuggie Secret

Today we celebrated Mothers in our part of the world - and I was super spoiled (and laughing my head off!) when Symon and the kids presented me with a Snuggie for my Mother's day present!

We've all laughed and mocked Snuggies for a while now (along with Onesies), and as I sit here at the computer typing this post, I'm wearing my Snuggie with my Onesie underneath, and am rather fond of them both - don't laugh!!

And in more normal news, Mum's rock!  

Today was a fabulous Mother's Day in our part of the world.  Symon and I have the most amazing Mums who we love so much!

Church was also awesome today as we celebrated women, cause we women are pretty amazing aren't we!?!

I love how Jesus took time out to speak with and love the women of His day - He broke traditions and cultural boundaries to show how much God loves us, no matter how broken or messed up we feel. Awesome huh!?!

So Happy Mother's Day to our amazing Mums!  You are both such precious and amazing ladies, and Symon and I are so privileged to have you as our Mums.

p.s. Only my cheeky hubby would do a selfie of him in my snuggie and set it as my phone background!  I secretly reckon he's going to use my snuggie when I'm not looking...

Pink Puffle Cake

Today we celebrate our eldest girls birthday with a Pink Puffle Cake (if you don't know what a puffle is, check out the Green Puffle Cake we made about 4 years ago and the link with info!).

I haven't been running on 100% Kristy lately - still getting over our trip, a little under the weather and trying to juggle a busy life at the moment - so this years birthday was a low key sleepover last night with her bestie, pizza, movie and cake.  It all went rather well, considering my brain has been left up the creek with out a paddle... I even discovered I'd bought her 3 birthday cards over the last month! Doh!!

It's a Super Special Day...

Today is a super special day - it's our precious eldest daughter's birthday!  Born on Mother's Day many years ago, she was an extra special Mother's Day gift.

Life has been a crazy whirlwind the past couple of weeks, so we are celebrating her birthday this weekend with a special friend over for a sleep over... think pizza, movie and lots of girly giggles - oh, and a cake.  Will show you that once it's done!

Hello from the Land of Oz!

Hello from the Land of Oz!

We are having a tonne of fun in Brisbane, Australia at the moment, and thought I'd say a quick hi and share some of our adventures!  We have had 4 days of absolute awesomeness, checking out the city, catching up with our precious family and friends and just being... being together.  We are looking forward to a few more days here attending Heart Conference at Citipointe Church and travelling up to the Sunshine Coast to stay.

Here are some of our highlights so far...

Staying with and spending time with our amazing family - Symon's big brother, sister-in-law and nephew. These guys rock and we feel so at home staying with them.  We have really needed some down time and it has been amazing to feel the stress melt away as we hang with our family here.

We've been exploring the local sights...

Symon has been in his element with all of the different critters around...

So far he's held a tiny baby ghecko, a baby cane toad, begged me to let him have a pet snake when we spotted a baby snake for sale in a pet shop (thank you New Zealand for not allowing pet snakes!) and tried to catch lizards and birds along the way...

Another major highlight has been catching up with some special friends.  My lovely friend Anya lives here in Bisbane, along with Lisa (Weza).  Leonie also happened to be back in Brisbane for a wedding, so us four girls had the most awesome day out exploring Ikea and catching up over coffee.

I was so excited about visiting Ikea for the first time ever that we tried to take a photo of me jumping for joy, then Anya got involved, and things got rather crazy...

The craziness spread to inside Ikea, where we decided that we would make amazing models for their magazine displays.  We weren't kicked out thankfully...


So as you can see, we are loving our time here in Brisbane.  We are missing our 4 kids so much, but know they are in good hands (thanks mum & dad!!).

p.s. Husband naps run in the Drake family...
