Things I'm Loving...


I wholeheartedly believe that no matter what is happening in your life, there is always something that you can be thankful for... no matter how simple it is.  

Here are a few of the things I am loving at the moment...

Loving whipping up a quick batch of pinwheel scones and everyone digging in while they are freshly iced and still warm.


The first fire this winter...


Pet shop visiting - a cheap form of school holiday entertainment!


Crochet beanies for barbie (I'm embarrassed to admit)...


Remembering that yesterday was my third year of blogging anniversary!  Still love it - especially the inspiration I find from you all out there and the wonderful friendships made.


Finally, my brave little soldier, who after a collision with her big brother on the trampoline a couple of days ago, now has 3 stitches in her tongue!  They don't usually stitch tongues, so as you can imagine, it was a slightly awkward procedure. We've been on a long journey with her issue with doctors, and despite the horrible incident yesterday, she did so well and was even smiling and waving at each nurse and doctor she saw.

Royal Crush


While sharing my excitement at watching the up and coming royal wedding on the television this Friday night, a certain husband was rather adamant that there was no way he was going to snuggle up on the couch with me and enjoy a night of royal wedding bliss.

Now, I'm not really a big royal fan, but seriously folks... things like this don't happen every year.  You just have to grab the moment when the moment calls... and I think this is definitely a 'calling moment' wouldn't you say?

I came to the conclusion that he was in serious denial, too shy to admit that he was indeed a royal fan in hiding.

To show my love and support (but not force him to commit to our royal date night) I bought him a little special something just to show that I understood... I know what it's like when you can't openly express your likes or hobbies for fear of scoffing and humiliation from others - I've been there before with my crochet persecution (and we all know how much he secretly loved my heart bunting even though he'd never publicly admit it).

Let's just say that he loved my little gift - a special royal mug featuring Prince William and Kate.  I think the Anzac biscuit helped a lot too. 


I think I can almost see a little tear in his eye at my thoughtfulness... wouldn't you agree?


Oh I do love this guy - and yes people, he is seriously not into Royal stuff... although for some strange reason he can remember the year that Princess Diana and Charles were married.  Hmmmm.

Easy Feijoa Muffins


We currently have feijoas coming out of our ears, thanks to our neighbours generous feijoa tree that hangs over our driveway. I love feijoas and anything feijoa related (you wouldn't believe how addicted I was to feijoa juice when pregnant with our youngest!).

When I saw (and couldn't stop drooling over) BobbyRobin's Yummy Feijoa Loaf last week, I just had to make it... and then went on a 'feijoa recipe hunt'.

That's when I found these delicious babies - and I love the fact that this recipe is so easy to whip up (and devour).  Check out the other great recipes on this Kiwi Wiki site too - Kiwiana heaven!!

Easy Feijoa muffins
1 cup chopped feijoa
75 gm butter
2 eggs
¾ cup sugar
2 tsp baking powder
2 cups flour
milk to mix (or fresh lemon or orange juice)

Topping
1 tsp cinnamon
1 Tblspn sugar

Cut feijoas in half and scoop out flesh with a spoon and overfill a cup.  Cut feijoa flesh into pieces so cup is packed.  Melt butter in a bowl add feijoa and stir.  Add unbeaten eggs and combine.  Fold in dry ingredients, add liquid to achieve a soft consistency.  Spoon into muffin pans.  Mix cinnamon and sugar topping and sprinkle over muffins.

Bake in 200° for 10 to 15 minutes.
Makes 12 standard, or 24 mini muffins

Things I'm Loving...


I wholeheartedly believe that no matter what is happening in your life, there is always something that you can be thankful for... no matter how simple it is.  

Here are a few of the things I am loving at the moment...

Our wee one enjoying breakfast on the deck by herself while on holiday...


Picking 'bunny tails' to later colour in with felt pens (loved doing this as a kid)...


Starting a new granny stripe blanket for a special wee man while on holiday (my last one here). 


This girl's face at her bestie's McDonald's birthday party, especially when she got to make her very own ice cream (but was a little put out that the man didn't let her do it all by herself).  Check out Jackie's amazing Volcano Cake she made for the party too.

  

My dream surf wagon - a VW Kombi! 


New Zealand - and all the beautiful places hidden away in this precious land...

Holiday Bliss

In celebration of our 15 year Wedding Anniversary, my lovely Mum offered to babysit our children while we went away alone for a few days.  Total bliss I tell you!  My generous Aunt and Uncle offered us their beautiful beach house to stay in, half of the holiday alone, and half way through the kids came out and joined us for a much needed family holiday.

Our time alone was so good. It's amazing how much free time you have when there are only 2 plates to wash after meals, hardly any washing to hang on the line and no bath-story-bedtime routine to go through.  We loved our time together, and although missed our kids, cherished the refreshing break.

Once the kids arrived it was all go (seriously, we got a bit of a shock going back to reality!).  We had such a fun time, making the most of the nearby fishing spots, beaches and beautiful walks.  Boo loved it too - boy do I have some crack up picks to show you of her next week!

Holidays are so awesome - and I am so thankful to my lovely Mum who single handedly babysat all 4 kids (while my Dad was away working in Christchurch and feeling a rather large aftershock) and my awesome Aunt and Uncle who let us stay in their beautiful spot.

We're Back!


We're back from holiday... and I bet you didn't even know I was gone (thanks to my sneakily scheduled blog posts while away)!

As you can see, we went to a beautiful place... and drove home with a very full car (there is actually a 4th child somewhere in the back there).


We had such a great time, and I will tell you all about it... as soon as I've recovered from unpacking.

Spiced Carrot Muffins


I just love smuggling vegetables into baking (remember the Chocolate Zucchini Cake?) and when they are quick and easy to make and have the added bonus of cream cheese icing... mmmmmmmmmm!!

I found this delicious recipe here, and modified it slightly to fit with what I had in my cupboard (as I am sure you all do).  Don't have pumpkin pie spice?  Try using cinnamon and nutmeg instead.  Don't have plain yogurt? Measure out the amount needed with milk and add a teaspoon of white vinegar, stir and leave to rest for a few minutes.  You then have your very own buttermilk that I say passes just fine as runny yogurt!


These are great eaten without icing, or you can dust with icing sugar or make my favourite... cream cheese icing!

Enjoy. 

Ingredients
1 3/4 cups all-purpose flour
1/2 cup sugar
2 teaspoons pumpkin-pie spice
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cups plain yogurt
4 tablespoons melted unsalted butter
1 large egg
2 cups peeled, shredded carrots (about 5 medium)

Method
Line 12 cups (each 2 1/2 inches wide) of a standard muffin tin with paper liners; set aside. In a large bowl, stir together flour, sugar, pumpkin-pie spice, baking powder, baking soda, and salt; set aside.

In a separate bowl, whisk together yogurt, butter, and egg. Make a well in the center of the dry ingredients and add yogurt mixture. Stir until just combined. Fold in carrots.

Spoon batter into prepared muffin cups. (If desired, muffins can be baked immediately in a 375-degree oven for about 20 minutes.) Freeze until firm, about 30 minutes, then cover tin with plastic wrap, and freeze until ready to bake, up to 3 months.

Preheat oven to 375 degrees. Bake muffins (still frozen) until a toothpick inserted in center of one comes out clean, about 30 minutes. Transfer to a rack. Serve warm or at room temperature.

My Creative Space

Things I'm Loving...


I wholeheartedly believe that no matter what is happening in your life, there is always something that you can be thankful for... no matter how simple it is.  

Here are a few of the things I am loving at the moment...

Discovering my son has seriously amazing spoon hanging skills.  He can do 5... apparently the world record is 16. He asked me if we'd buy him a pack of 20 spoons for his birthday - I bet no other kid has ever asked his mother that.


Spending special time with my love on our anniversary (with a certain Little Miss in tow too).  Thank you all sooooo much for your lovely comments on our Anniversary post.  Especially loving the comment about our hands... hehehe.



Beautiful cards...


Loving the fact that the cooler weather means delicious soup more often, and using my Grandmother's special pumpkin soup serving set...
