Iced Coffee

The sun is finally out and iced coffee has been on the menu today.

I love iced coffee... especially with a spoonful of icecream or whipped cream, or just a couple of ice cubes.

This recipe is my favourite, from the "New Zealand Jumbo Junior Cook" by Mary Pat Fergus. The evaporated milk gives it an extra special taste. I often double the recipe and also add extra milk to taste.

Ingredients
2 tablespoons instant coffee
1 tablespoon cocoa
1/2 cup sugar
2 1/2 cups water
1 cup evaporated milk
1 teaspoon vanilla
vanilla icecream
ice cubes

Method
Put coffee, cocoa and sugar in a small pan. Stir in water, mixing it in well. Bring it to the boil, stirring all the time.
Take off heat. Add the evaporated milk and vanilla. Pour it into a jug. Chill in the fridge until it's icy cold.
Put icecubes and a scoop of icecream in tall glass. Pour in cold coffee. Pop in straw and serve.
