Honey Ricebubble Slice

Honey Ricebubble Slice is a traditional Kiwi (New Zealander) sweet treat!  I even remember my Mum making this when I was young.  

The recipe is super simple, and for fun you can zhuzh it up a bit by adding extra ingredients to the mix.  Things like coconut, chopped apricots and marshmallows are delicious!!

Ingredients
125g butter
½ cup of sugar
2 tablespoons of honey
4 cups rice bubbles (popped rice breakfast cereal that is just plain – no coatings or flavouring)
Grease a swiss roll tin and have a large bowl with the ricebubbles in it all ready
Mix up honey and sugar and butter into a pot with a solid base and melt – simmer as if making toffee for about 5 min – depending on how crunchy you like it, somewhere between soft ball and hard ball stage
Now, working really quickly (as it will start to set in the bowl), pour the honey toffee mix over the ricebubbles, mix through as well and as fast as you can and pour into greased tin and push down til its about an inch or so thick and firm together and leave to set.
Cut into squares to serve!

    we call the Rice Crispy Squares here...but I like Rice Bubble Better!
