Bacon & Egg Pie

I love Bacon & Egg pie!  It delicious, easy to make and can either be served hot or cold. The added bonus is that it's a reasonably cheap meal to make. Thanks to the trusty Edmond's recipe book for this timeless recipe... 

Preparation Time: 20 minutes
Cooking Time: 40 minutes

Ingredients
2 sheets Puff Pastry, thawed
1 medium onion, finely chopped
1 cup chopped bacon 
2 tablespoons spicy chutney 
6 medium eggs 
Salt and pepper 
1 Tablespoon milk

Preheat oven to 200C. Line a 20cm square shallow cake tin with 1 sheet of pastry.

Sprinkle onion, bacon evenly over the pastry. Dot the chutney on top. Break eggs evenly over, pricking the yolks so they run slightly. Season with salt and pepper to taste. Carefully lift second sheet of pastry over filling, and press edges together to seal. Brush top with milk.
Bake for 40 minutes, or until well risen and golden brown

Easy and so delicious!
