When life throws you floppy biscuits...

Things got a little crazy in my kitchen last night.  

While frantically trying to whip up a batch of Coconut Macaroons (in amongst cooking dinner, overseeing homework,  feeding the never ending loads of damp washing through the dryer, trying to encourage the dog to go outside and do a wee in the pouring rain and organising showers for my four grubby offspring) my special biscuits made especially for a very special occasion, all melted together and gave me one big giant tray of floppy biscuits!


There was no time or ingredients to make any more... I just had to do something.  I decided that I would take the floppy mess and turn it into something special... I would make toasted coconut macaroon truffles (melted chocolate drizzled over the top would have made them even better, but alas, I had none).

I suppose you've all heard the saying, "When life throws you lemons, make lemonade"?  Well, when life throws you floppy biscuits... make some tasty biscuit truffles ;-)   

My disappointing experience in the kitchen reminded me of my most amazing God.  It will never cease to amaze me, how He can take our disappointments and make them into something better than we would ever have thought... and seriously way better than my little biscuit patch up job!

It's an amazing fact that can give anyone hope... even in the most disappointing of circumstances.

p.s. for you sanity's sake, I won't share my recipe with you this week!

  3. Amazing how a kitchen disaster can make you reflect on the bigger picture. I love how floppy biscuits, in a convoluted way, brought you deeper happiness. There's always a silver lining!

  8. Ah! One time I had just finished preparing a quiche - it was already in its dish, the oven pre-heated, I opened the door and went to put the dish in and it snagged on the rack, falling and tipping the quiche out all over the hot oven :(
    I bawled.

    Another time I had made lasagne in my fav perfect lasagne dish (come on, we all have one) and whilst it was cooking the dish broke in half - yup, right down the middle - width-wise. DEVASTATING.

    Glad you could at least MAKE something with what you had :) - In fact I bet they would taste great with apricot and orange!!
