Lolly Slice

Lolly Slice is one of those classic cafe and bakery items that my kids always beg me to buy for them (along with the humble Gingerbread Man).  I recently decided to try making my own Lolly Slice for Miss 4's birthday and was pleasantly surprised at how easy it is to make (a great item to get your kids to help you make too).

I found the recipe here - and trust me, it's delicious and the perfect thing to make a few days before it's needed.

Ingredients
1 x 250 g packet sweet biscuits, crushed  (I prefer malt biscuits)
½ x 395 g tin condensed milk
115g margarine or butter, melted
1 packet lolly bananas, musk sticks, fruit sticks or similar lollies, chopped roughly  (I use eskimo lollies)
Coconut (optional)

Method
Mix all ingredients together then press into a 20cm x 25cm slice tin.
Sprinkle with coconut if desired.
Refrigerate, then cut into pieces to serve.

Recipe notes
This can be iced with chocolate icing instead of being sprinkled with coconut. It can also be rolled into a log shape and rolled in coconut, then sliced after being refrigerated.

Have fun!

  9. Ahh. That's same recipe I use. Super easy huh? And it's ALWAYS a winner, with both kids and adults. I usually make it as a log instead of in a tin, but tastes just as good :)
