Banana Loaf

By PaisleyJade - Monday, October 28, 2013

The bananas in my pantry were looking rather brown today, so I decided to look up a banana loaf recipe out of my Great grandmothers cookbook (EGR Cook Book).

This recipe is so simple, so I doubled it and also made some banana muffins with the extra mixture.

My loaf turned out delicious, and the kids have been begging me to let them eat more!

Ingredients
60g/2oz Butter
½ cup Sugar
1 Egg
2 Bananas
½ Teaspoon Baking Soda
1 tablespoons Warm Milk
1 cup Flour
½ cup chopped Nuts (optional)
Pinch Salt

Method
Cream butter and sugar, add egg, then mashed banana.  Dissolve soda in milk and add.  Lastly add flour, salt and nuts if desired.  Bake in moderate oven ½ hour.
