Apple Cakes

Look at these sweet little things just waiting to be gobbled up!

These cute little "Apple Cakes" are super simple to make (great recipe to do with kids in the kitchen) and are a smaller and healthier version to a bigger muffin or iced cupcake for those of us trying to get rid of the Christmas spread (hehe).

They can be prettied up with a bit of sifted icing sugar, but I think they look great just as they are.

Ingredients
2 cups self raising flour
¾ cup sugar
1 teaspoon cinnamon
125 grams soft butter
3 eggs
¼ cup milk
½ teaspoon vanilla
1 tablespoon lemon juice
1 apple

Turn oven to 190°C (375°F).  Set out your patty cases into your cupcake tin.
Sift flour, sugar and cinnamon into big bowl.
Add butter, eggs, milk, vanilla and lemon juice.
Beat on medium speed for 2 minutes - till well mixed.
Peel the apple and grate it, adding to bowl then beating well.
Put heaped tablespoonful lots into cases.
Bake them 12-15 minutes or until golden.

Enjoy (I sure did).
